QB Issue Resolution:

As you are making the conversion from Sales Order to Sales Receipt (“Sell Items”), you can change the date on the Make a Sale screen before saving the receipt. Once you save the receipt though, you cannot change the date of the receipt.

To fix what you did, you would need to reverse the Sales Receipt created and sell the items from the Sales Order again but change the date on the Sales Receipt before saving it.
