QB Issue Resolution:

QB does not track use tax, and use tax is due on purchases not sales, unless there is something really strange in your state, if so what state?

voiding an invoice erases the transaction, no sales tax payable is recorded, no sale is made

to use a credit memo in QBDT you have to create an item which points to an expense account, if you are going that way check with your tax accountant to see what expense account you should use.
