QB Issue Resolution:

no expiration date does not make a difference other than the issue of your manually tracking the expiration date and when expired moving the amount to income manually using a journal entry

debit liability, credit income

create a current liability account called gift-cert in the chart of accounts, gear.settings.chart of accounts

then create a service item in the gear>lists>products and services list called gift-certif and select the current liability account gift-cert on the item screen

use a sales receipt and that gift-certif item to record selling a GC

when you make a sale, list the items being sold, then list the gift-certif item and the GC amount as a negative
