There’s an option for the default date that appears on new transactions. It will either be the last date you used or today. Sounds like you have it set to the last date used on a new transaction.

advancing: How do I keep the date from advancing when I edit a memorized transaction $ amount?

Open the memorized transaction and make the change; CTRL+M to re-memorized it.  Then ESC to exit out of the transaction and if asked if you want to save it say No.
