Amortization: HOW DO I SET UP A LOAN AMORTIZATION SCHEDULE?

You do not, QB does not do that.  Loan amortization schedules are a best guess estimate, there are several web sites that will do that for you, google for them

Amortization: I’m setting up my book online. I would like to set up an Amortization Entry for a prepaid expense. When I click on Journal Entry, I see no way to make it recurring.

Recurring transactions feature is not available in Simple Start plan. It is available in Essentials and Plus.

From company gear (upper right corner), you will see recurring transactions under lists. You will notice little up arrow next to recurring transactions, it means you will need to upgrade to use that feature.
