In business accounting, you have income, and you have expense, then on the P&L income is reduced by expense to show net profit

So:
what you pay to the vendor, is your expense
what the customer pays you is your income

In your extreme example, the net profit would show $1, the amount reported […]

COGS is its own type account in QB, it is an expense account not equity

This is business accounting,
you record income from a sale
You pay expenses
and on the P&L income is reduced by expense

It is not done by listing expenses per sale on the sales receipt or invoice.
