Inventory in desktop does not have categories, you use an inventory item as a category and make real inventory items sub items

No, it has to be a bank acct.   I would say pick cash at bank.  It may be a UK term.

inventory is only in QBO+, if you have plus, then COGS will show up in the chart of accounts when you enable qty tracking (inventory) in company settings
