We’re unable to turn off the cheque number field. You’ll want to change the number sequence manually.

From the Write Checks window, edit the cheque number.

I would create an expense account called finance charges and enter the amount as a negative when posting your deposit or you can just enter separately through a journal entry or write checks window.
