COGS: I make personalized products, so I do not make assemblies nor products till after it is ordered. How do I handle this with a work order?

you are making on demand so there is two choices

1. list the inventory items on the sales receipt or invoice all at a zero sales price

or

2. use inventory adjust, set the adjusting account to COGS, and lower the qty of the items used

COGS: Inventory transactions show in ledger without a value

Yes these transactions were generated from the sales transaction (the same is true if I make an inventory quantity adjustment).  We operate on an accrual basis.  The sales booked ok against AR and have subsequently been paid.
