company profile: When 1st creating the company profile, under “Company Start Date” should I enter the actual company start date or just when I would like to start using Quickbooks?

The Company Start Date in QuickBooks is an arbitrary date that they can use as the starting point of tracking their accounting information in QB, and doesn’t necessarily have to be the start date of the company. We still do recommend to discuss this with your accountant.

company profile: I set up my company profile and settings as a non-profit, however, the chart of accounts still appears to be for a for-profit. Do I need to set that up manually?

We all have the same activities; you just set up and add or delete and rename, to meet your needs.

We all buy office supplies and have other Expense. We all get Income. You can name yours Donation, and you still might have Sales.
